Betty and I were in the same Class of 1948 at Olean High School. Betty had an engaging smile and loved to laugh. She was an excellent student; I remembered how capable she was to take both Latin and French while a student. Our family and hers bonded because my dad and her dad were both in the restaurant business. My dad enjoyed going to her dad’s great Texas Hot Restaurant on N. Union Street to talk and have one of their famous Texas Hot hot dogs with the special sauce. Betty had a wonderful work ethic and influenced many students in the classroom and in her position as counselor and in her administrative duties at Hindsdale Central School. She really was a dedicated professional who continued to be involved in community programs and school programs. She and her sister Rose, who passed away awhile ago, took care of their parents in later years when their parents became ill. God bless her soul. My husband Leon and Betty were the counselors on the Hindsdale senior trip to D.C. that was held when they both were employed at the school.

Ms. Pappas with her warm smile, pat on the shoulder, and gentle ways helped so many students in the Olean School District. Any student who had the privilege of her guidance was a lucky person. She helped many parents get thru teenage angst and high school. And her generosity to help so many who were either homeless, hungry, searching, or had potential that she recognized was unprecedented. She was a kind soul and devoted daughter and sister. May her memory be a blessing. I will never forget her
